VINIFICATION AND AGEING
After the grapes are removed from the stalks and pressed, the must is fermented in keeping with traditional practices but with the use of rotating horizontal fermenting vats that assure delicate maceration of the skins. As a result, the wine takes on the colours, aromas and substances of the grapes from which it is derived. Once the vinifi cation has been completed, the wine is racked into oak barrels for maturation.

COLOUR
Bright, attractive and warm ruby-red colour.

BOUQUET
Fruity and fresh with vinous tones and welldefi ned scents of bitter almonds against a tenous background of wild berries.

FLAVOUR
Dry on the palate with delicate and soft veining and harmonious balance. The aftertaste is highly persistent and delectably clean.

SERVING TEMPERATURE
Serve at 16° – 18° C. (61° – 64° F.).

FOOD MATCHES
To be consumed throughout a meal, it makes a particularly fi ne accompaniment for all meat dishes, savoury preparations of the rural tradition and cheeses that have been aged for moderate periods.

VINIFICATION AND AGEING
The stems are separated from the grapes,which are softly pressed in cylinders under pressure gently breaking their skins and releasing the juice. Then the free-run must extracted from the pulp is separated from the skins before fermentation begins. The alcoholic fermentation is conducted in stainless steel vats at controlled temperature of 18°C (64°F) in order to retain fresh fl avours and the primary aromas from the grapes.

COLOUR
Straw-yellow colour with appealing, brilliant reflections.

BOUQUET
It off ers scents of white fl owers combined with those of slightly green apples.

FLAVOUR
It is a wine of great elegance, off ering aromas of good intensity, superbly balanced and persistent. The aftertaste is delicate.

SERVING TEMPERATURE
Serve at 10° – 12° C. (50° – 54° F.).

FOOD MATCHES
It is ideal as an aperitif or when matched with horsd’oeuvres, fi sh or vegetarian soups, crustaceans and boiled seefood.

Primitivo Salento IGT

VINIFICATION AND AGEING
The grapes are subjected to a soft crush in horizontal presses. Fermentation lasts eight days and occurs at a controlled temperature of 25-28°C (77-82°F). After the alcoholic fermentation is over, the wine undergoes also the malolactic fermentation, a process that lowers total acidity and makes wines seem rounder and fuller in flavor.


COLOUR
Relatively dark but brilliant ruby-red.

BOUQUET
Ample and persistent with hints of fully ripe red fruit, plums and sweet spices.

FLAVOUR
Dry with a solid structure and outstanding roundness. It shows a complex fruitiness on the palate that is remarkably persistent.

SERVING TEMPERATURE
Serve at 16° – 18° C. (61 – 64° F.).

FOOD MATCHES
Ideal with tasty pasta, red meats, whether roasted or prepared in sauces as well as feathered and furry game and cheeses that have been aged for moderate periods.
 

Pinot Grigio Delle Venezie DOC

VINIFICATION AND AGEING
The grapes are subjected to a delicate crush and soft pressing with the use of presses operating under vacuum. Fermentation occurs at a controlled temperature of about 18°C (64° F), which preserves the fruitiness and the fi nest sensory characteristics of the wine. Injection of selected yeasts guarantees maximum quality of the wine’s aromas and flavors.

COLOUR
Appealing straw-yellow colour with delicate green reflections.

BOUQUET
Delicately fruity, relatively full and refi ned. It offers an ensemble of aromas of great finesse.

FLAVOUR
Lightly dry and extremely fresh dry yet extremely fresh. It also off ers a delicious reminder of the original grape. Its light and elegant structure makes this an unusually refi ned and aristocratic wine.

SERVING TEMPERATURE
Serve at 10° – 12° C. (50° – 54° F.).

FOOD MATCHES
It combines particularly well with delicate appetizers, pasta courses with light sauces and white meats. In addition, it makes a fine aperitif and is highly suited to every occasion outside meals.
 

Moscato Puglia IGT

VINIFICATION AND AGEING
Fermentation is allowed to progress until the wine has obtained 7% alcohol. Then the grape’s natural sugar content is preserved by refrigeration in order to give the wine its unique sweet and aromatic characteristics.

COLOUR
Straw-yellow with golden refl ections and a delicate mousse.

BOUQUET
Fruity and very inviting, with intense scents of peaches and exotic fruit.

FLAVOUR
Fresh and pleasantely sweet with a taste that reveals its varietal characteristic.

SERVING TEMPERATURE
Serve at around 6° C. (43° F.).

FOOD MATCHES
Excellent as dessert wine it matches perfectly with jam tarts fruit salads and pastry. Also delicious with ice cream, or just on its own as an accompaniment to conversation among friends.

Montepulciano d’Abruzzo DOC

VINIFICATION AND AGEING
The grapes, are softly pressed in cylinders under pressure gently breaking their skins and releasing the juice. The must macerates on the skins for about a week in stainless steel vinifi ers at a temperature of about 28° – 30° C. (82° – 86° F.). After the alcoholic fermentation is over, the wine undergoes also the malolactic fermentation, a process that lowers total acidity and makes wines seem rounder and fuller in fl avour. The wine is then placed to age in large Slavonian oak casks.

COLOUR
Brilliant, attractive and warm ruby-red colour.

BOUQUET
Broad bouquet, with well-defi ned scents of bitter almonds against a faint background of wild berries.

FLAVOUR
Smooth, full-bodied with notable personality and outstanding persistence.

SERVING TEMPERATURE
Serve at 18° – 20° C. (64° – 68° F.)

FOOD MATCHES
The wine can be consumed throughout a meal and makes a particularly fine accompaniment for tasty pasta dishes, risottos, grilled red meat and cheeses that have been aged for moderate to long periods.

As a result, the wine takes on the colours, aromas and substances of the grapes from which it is derived. Once the vinifi cation has been completed, the wine is racked into oak barrels for maturation.

Intense ruby-red colour enriched with brilliant reflections.

BOUQUET
Captivating because of its freshness and its delicious vinosity in combination with a delightful abundance of fruity tones.

FLAVOUR
Pleasantly full and intense with soft tannins and a long fruity finish.

SERVING TEMPERATURE
Serve at about 16° C. (61° F.).

FOOD MATCHES
It is a classic wine for the entire meal. It makes a particularly fine accompaniment for fi rst-course dishes dressed with meat sauces, white and red meats, savoury polentas and moderately aged cheeses.

VINIFICATION AND AGEING
The grapes undergo a soft, delicate pressing. This is followed by 24 hours’ maceration at 5°C (41°F) of the must on the skins in order to extract the aromatic substances. Fermentation is carried out at controlled temperatures of 18°-20°C (64°-68°F), followed by maturation on the wine’s own natural lees.

COLOUR
Intense straw yellow with lively greenish hints.

BOUQUET
Deliciously intense with beautiful aromas of peach, grapefruit and lime skin.

FLAVOUR
Flavourful with hints of exotic fruit and an attractive fruity character sustained by a lovely bright freshness.

SERVING TEMPERATURE
Serve at 10° – 12° C. (50° – 54° F.).

VINIFICATION AND AGEING
Vinification takes place after delicate crushing of the grapes. The must macerates on the skins for 1-2 weeks in order to favour the extraction of colour and other polyphenolic substances. When the malolactic fermentation is also complete, the wine matures for 6 months in Slavonian oak barrels and a further 4 months in bottle before release.

COLOUR
Ruby-red with garnet reflections.

BOUQUET
Fine, with scents of cherries, wild berry fruits, violets and spicy hints.

FLAVOUR
Dry and fresh, with good body and agreeable tannins.

SERVING TEMPERATURE
Serve at 18° – 20° C. (64° – 68° F.).

FOOD MATCHES
When young it is excellent with richly-fl avoured dishes, especially the traditional specialties of Tuscan cuisine. After 3 or 4 years we recommend it with game, stewed meats, and strong, mature cheeses.
