VINIFICATION AND AGEING
The grapes undergo a soft, delicate pressing. This is followed by 24 hours maceration at 5°C (41°F) of the must on the skins in order to extract the aromatic substances. Fermentation is carried out at controlled temperatures of 18° – 20° C. (64° – 68° F.), followed by maturation on the wine’s own natural lees.

COLOUR
Pale straw-yellow with greenish reflections.

BOUQUET
Intense yet refi ned, with fresh hints of peach and pineapple.

SERVING TEMPERATURE
Serve at 10° – 12° C. (50° – 54° F.).

FOOD MATCHES
A pleasant light aperitif, it matches well with appetizers, especially if fi sh-based or vol-auvents. Excellent also with delicately flavoured pasta or rice dishes.

Cabernet Italiano

VINIFICATION AND AGEING
After removal of the stalks and soft pressing, fermentation is carried out according to traditional principles but with the use of rotating horizontal fermenting tanks and delicate maceration of the skins to assure the wine the colours, aromas and fundamental elements of which it has need. Once the sugar has been converted to alcohol, the wine is racked into oak casks where it completes its maturation.

COLOUR
Intense and vivid ruby-red colour.

BOUQUET
Pleasant bouquet, full and richly nuanced.

FLAVOUR
Dry flavour and sturdy body that shows fi ne breeding. It has a balanced, full and persistent taste with a lightly grassy background.

SERVING TEMPERATURE
Serve at 18° – 20° C. (64° – 68° F.).

FOOD MATCHES
It is an extremely versatile Cabernet. In its youth, it can be appreciated as a full and generous wine to be drunk throughout a meal, especially when the menu contains highly savoury dishes, such as polenta or other main course preparations of rural tradition.

Bardolino DOC

VINIFICATION AND AGEING
The stems are separated from the grapes,which are softly pressed in cylinders under pressure gently breaking their skins and releasing the juice. The juice is left to macerate on the skins for about a week in rotating temperature controlled stainless steel vinifi ers at a temperature of about 28-30°C. After the alcoholic fermentation is over, the wine undergoes also the malolactic fermentation.

COLOUR
The wine displays a light ruby-red colour.

BOUQUET
Fascinating because of its freshness and its delicious vinosity in combination with a delightful of fruity tones.

FLAVOUR
Appealingly dry flavour but fresh and with a well balanced harmonious fruit and a delicate almondy vein in the finish.

SERVING TEMPERATURE
Serve at about 16° C. (61° F.).

FOOD MATCHES
Its pleasantly light, fruity style makes it an elegant accompaniment to entrees and simply prepared white meat dishes. Deliciously complementing pastas, it is also a very good aperitif wine.

The grapes are vinifi ed with great care in order to express the characteristics of the area to the full. After the malolactic fermentation it is aged for six months, thus attaining greater harmony and complexity.

Ruby-red with bright purplish tones.

BOUQUET
Pleasantly vinous, delicate and fresh, with hints of roses.

FLAVOUR
Broad, soft and rich, with discreet almond notes.

SERVING TEMPERATURE
Serve at 16° – 18° C. (61° – 64° F.).

FOOD MATCHES
An excellent food wine, it goes particularly well with meat dishes (especially boiled meats and roasts), or with mature cheeses.

The Phileo sparkling wine is made by the extended Charmat method, which takes advantage of the wine’s natural lees. These, left in contact with the wine for 12 months, help to give an extremely fine perlage and a complex, refined bouquet.

VINIFICATION AND AGEING
The Pinot Nero grapes are harvested with a higher degree of ripeness than those for the Blanc de Noirs: this allows for a very moderate extraction (by means of soft pressing) of color from the skins, thus giving the wine its characteristic rosé hue. The base wine is re-fermented in pressurized tanks using the Charmat method, with a long period of contact between the wine and its lees, so as to obtain an extremely fine bead and a rich bouquet.

COLOUR
A brilliant pink with purplish reflections.

BOUQUET
Fresh and fragrant, with marked scents of redcurrants in a broad, floral bouquet that gives way to attractive yeasty notes.

FLAVOUR
It is rounded and mellow on the palate, with great length. Its fl oral nuances and hints of red berry fruits lead into an extremely clean finish.

SERVING TEMPERATURE
Serve at 6°- 8° C. (43° – 46° F.).

FOOD MATCHES
Excellent both as an aperitif or served throughout a meal. Ideal with raw scampi or tuna carpaccio.

Bonarda Vivace Oltrepó Pavese DOC

Vinified by traditional methods in order to emphasize its attractive fruitiness, it is then re-fermented to obtain a fragrant, lightly fizzy style.

Intense ruby-red with violet reflections.

BOUQUET
Intensely fruity, with hints of violets, bitter almonds, sour black cherries and plums.

FLAVOUR
Dry, rounded and savory; slightly pétillant.

SERVING TEMPERATURE
Serve at 14° – 16° C. (57° – 61° F.), but no warmer.

FOOD MATCHES
Excellent with savory tarts, agnolotti, meatfilled ravioli, sausages, roast or stewed white meats, and moderately aged cheeses.

San Cristoforo Maremma Toscana DOC

VINTAGE NOTES:
this was a vintage of extreme energy in the plants. We had good rain levels in the early part of the season, offset by blazing heat in the summer. Nevertheless in July and August the vines were not under stress, rather veraison and maturation were slightly ahead of schedule. September was cool and dry, just perfect, allowing us to pick up grapes during the fruit and flower days in the Biodynamic calendar. As usual the picking started beginning of September with Vermentino, Trebbiano and Malvasia from Campo Vecchio, our hystoric vineyard. We then moved to Sangiovese later in the month and finished with the superb Petit Verdot in the very last days of September.
