VINIFICATION AND AGEING
Nero d’Avola, cultivated on deep soils of dark clay at 300 metres above sea level, is harvested with a degree of sugar ripeness and acidity suitable for obtaining a fresh and mineral sparkling base. Soft pressing follows, which allows for the production of a white wine from black grapes, without the need for further processing. After a period of ageing on the lees of about 3-4 months, the base wine is made sparking in an autoclave (Charmat method), where it remains for another 3 months before being bottled.

TASTING NOTES
Colour: straw yellow with light reflections ranging from greenish to platinum. Fine and persistent bubbles.
Bouquet: delicate hints of cherry, hawthorn, elderberry and jasmine.
flavour: harmonious, fine, persistent and creamy.

FOOD PAIRINGS
Pleasant as an aperitif, excellent with raw fish hors d’oeuvres, seafood or vegetable risottos, grilled fish.

Nero d’Avola Sicilia DOC

VINIFICATION AND AGEING
The Nero d’Avola grapes come from limestone-clayey vineyards (trubi) at an average altitude of 330 metres above sea level. The must ferments together with the skins in steel at a temperature of 28-30°C for about 15 days. Malolactic fermentation follows, again in steel. The wine ages in 30 and 60 hl Slavonian barrels for 1 year and ages for a few months in the bottle. 

TASTING NOTES
colour: rather dark ruby red, bright.
bouquet: intense hints of almond flowers, violets and hints of myrtle, followed by a delicate spiciness and pleasant balsamic notes.
flavour: dry, delicate, with a fine structure and good persistence. The pleasant floral and balsamic notes perceived on the nose are perfectly matched on the palate.

FOOD PAIRINGS
Excellent with full-flavoured dishes, chargrilled meats and well-matured cheeses.

Merlot Sicilia DOC

VINIFICATION AND AGEING
The must ferments for 2 weeks in vertical tanks at a controlled temperature of 30°C. Ageing lasts for 12 months, 20% in 350-litre tonneaux and 80% in Slavonian 60hl oak barrels, followed by a further period of ageing in the bottle.

TASTING NOTES
colour: intense garnet red.
bouquet: broad bouquet with hints of small red fruits, cassis and blackberry, perfectly melded with pleasant hints of vanilla.
flavour: soft and compact, with notes of berries, especially raspberry and blackberry. Long and lingering finish.

FOOD PAIRINGS
Excellent with cured meats, roasts, kebabs and grilled meats, and matured and sharp cheeses.

Insolia Sicilia DOC

After a soft pressing of the grapes harvested at perfect ripeness, the must ferments in stainless steel at a controlled temperature (1618°C) and is kept on the lees for a period of 6 months. Subsequent ageing for a few months in the bottle. 

TASTING NOTES
colour: golden straw-yellow, light and bright with gentle greenish reflections.
bouquet: broad bouquet with hints of flowers of broom, cantaloupe and exotic fruits such as pineapple and mango.
flavour: rich, harmonious with delicate hints of sweet almond.

FOOD PAIRINGS
Perfect with first courses made with vegetables, with fish soups, shellfish and white meats.

Grillo Sicilia DOC

colour: straw-yellow, light and bright with gentle greenish reflections.
bouquet: broad and surprisingly fresh nose, with hints of citrus, pineapple and a slight menthol vein.
flavour: complex, harmonious with a definite savoury vein and marked minerality.

FOOD PAIRINGS
Perfect with pasta dishes prepared with vegetables, and light dishes of cooked or raw fish.

Deliella Sicilia DOC

TYPE OF SOIL
This vineyard is situated right at the heart of the Feudo estate, in the hamlet of Deliella within the commune of Butera., at an altitude of approximately 300 meters (985 ft.) above sea level. The hilly terrain is composed of whitish marl (“trubi”), with clayey and siliceous sandstone breccia.

TRAINING SYSTEM
Cordon Spur.

PLANT DENSITY
5.400 vines per hectare (2,185 per acre).

YIELD
4.500 Kg per hectare.

VINIFICATION AND AGEING
The grapes were picked by hand in the end of September. The fermentation lasted for 3 weeks at a controlled temperature of 28° – 30° C. (82°-86° F.) with a maceration of about 30 days. Maturation took place for 18 months in 350-liter (92- gallon) tonneaux and in 30 hectoliter (660-gallon) oak barrels followed by a further eight months’ bottle aging before release. 

Chardonnay Sicilia DOC

The must begins fermentation in stainless steel at a controlled temperature of 20°C. Subsequently it is racked into 350-litre medium-toasted tonneaux, where the fermentation process continues for another 20 days. A long maturation on the lees is followed by bottle aging for several months.

TASTING NOTES
colour: intense, golden straw colour, bright with greenish transparencies.
bouquet: ample bouquet, with hints of pineapple, mango and ripe fruit, accompanied by sweet notes of vanilla.
flavour: rich, harmonious with an elegant touch of toasted almonds, well balanced with fruity notes.

FOOD PAIRINGS
Excellent as an aperitif, with fish dishes or white meats.

Cabernet Sauvignon Sicilia DOC

VINIFICATION AND AGEING
Fermentation takes place in vertical tanks for about 2 weeks. The wine then ages for 12 months, 50% in 350-litre tonneaux and 50% in 60-hl oak barrels, followed by a few months of ageing in bottle. 

TASTING NOTES
colour: dark, concentrated ruby red.
bouquet: intense hints of small ripe, almost jammy red fruits, melded with pleasant floral notes, hints of vanilla and distinct spicy notes.
flavour: full-flavoured, rich in extract, with the same spicy notes exhibited on the nose.

FOOD PAIRINGS
It pairs well with flavoursome first courses, grilled meats and well-matured cheeses.
 

Oltrenero Cruasé Traditional Method

VINIFICATION AND AGEING 
The grapes are harvested manually in small 16 kg crates and are destemmed. Maceration takes place for 6-8 hours allowing a slight extraction of colour from the skins. After soft pressing of the whole grapes, with 50% extraction of firstpressing must, settling takes place for 12 hours at 16°C. Alcoholic fermentation proceeds for about 12 days at 18°C. At the end of this period, the wine matures in stainless steel until the following July after harvest. The second fermentation and ageing sur lies in the bottle extend for at least 36 months, followed by 2 months after disgorgement.  

TASTING NOTES
colour: vivid pink with bright reflections, fine perlage and soft, persistent foam.
bouquet: its fragrant bouquet opens with pleasant citrus notes, such as tangerine, and unique hints of red berries, including raspberry, currants and wild strawberries. The finish is elegant and reminiscent of bread crust.
flavour: the mouthfeel is bold, fresh and flavourful, reflecting the bouquet on the finish.

FOOD PAIRINGS
Its balance and scent make it a perfect aperitif. It is a great match to fine cured meats and light dishes, such as risotto, soups and vegetables. Excellent with shellfish and raw seafood.

Oltrenero Traditional Method

VINIFICATION AND AGEING

Alcoholic fermentation proceeds for about 12 days at 18°C. At the end of this period, the wine matures in stainless steel until the following July after harvest. The second fermentation and ageing sur lies in the bottle extend for at least 30 months, followed by 2 months after disgorgement.

TASTING NOTES
colour: pale straw yellow, typical of Pinot Noir, decorated with soft foam and a very fine, continuous and persistent perlage.
bouquet: broad and reminiscent of bread crust, with mineral and floral hints of wisteria and elder. Fruity notes are typical of the red grape variety from which it is obtained: small red fruits, including currants and raspberry with pretty hints of citrus.
flavour: the mouthfeel is bold, fresh and flavourful, reflecting the bouquet on the finish.

FOOD PAIRINGS
An excellent apéritif, it pairs well with fine cured meats and hors d’oeuvre. Because of its structure, it can be paired throughout the meal with risotto and delicate pasta dishes, seafood and sushi.
